
Everyone of us, especially the children would always like to have something special in lunch or dinner and always try to escape themselves finding their normal food on the table which seems to be boring for their eyes. They want their food to taste different and also look presentable. Ghee Rice with Devilled brinjal not only tastes delicious but the bell peppers which are mixed in the rice makes them look colourful as well.
And as we are usually having our meals with devilled chicken why don’t you try something different and prepare a devilled brinjal for your children which is the perfect combination for this ghee rice. For the children who would not prefer ghee, you can use oil to the rice as well. This recipe will also highlight your home in any functions or festivals with it’s aroma and taste. Ingredients for the rice:
Basmathi rice/ Keeri samba 500g
Chopped onion 2
Chicken or meat 500g
Cumin seeds 1tsp
Ghee 75g
Ginger garlic paste 2tbsp
Bell pepper (half red and half yellow)
Cloves 3
Chicken seasoning powder 2tbsp
Oil 2tbsp
Salt
Pepper
Basil leaves 2
Cardamom 3
For the Brinjal:
Brinjal 400g (season it with salt, pepper and turmeric powder and fry)
Ginger garlic paste 1tbsp
Onion 1tbsp
Capsicum 3
Toatoes 2
Green chilli 2
Chilli paste 1 1/2tbsp
Tomato sauce 5tbsp
Chilli powder 1 1/2tsp
Turmeric powder
Salt
Pepper
Curry leaves
Rampe (Pandan leaves)
Oil for frying

Method for the rice:

Add ghee, Cumin seeds, cloves, cardamom, ginger garlic paste, onion and basil leaves to the rice cooker and mix them.
Add the bell peppers, chicken and the uncooked rice.
pour the chicken stock or chicken seasoning powder into it and add salt and pepper.
Finally, close the cooker till the rice gets boiled.

For the devilled brinjal:
In a heated pan, add ginger garlic paste, onion, curry leaves, rampe and pieces of green chillies.
Add capsicum, salt, pepper, turmeric powder, chilli powder, chilli paste and tomato sauce.
After mixing them add the tomatoes and fried brinjal slices to it. (Season the brinjal slices with salt, pepper and turmeric powder and fry them)
When the brinjal curry is mixed serve and enjoy!!!!
