4 types of brinjal curry (Sri Lankan style)

Sri Lanka is famous for its dishes and especially for the various curries which it’s residents prepare using coconut milk. Season 500g of brinjals with salt, turmeric powder and mix them. Fry the seasoned brinjals. When one side of the brinjal is fried, turn it to the other side. Once fried, take it out and drain the oil.

In a different vessel pour 4 cups of coconut milk and add curry leaves, 1/2 medium sized onion, 2 green chillies, turmeric powder, salt and mix them. Pour 1 lemon juice and add pieces of tomato (1). Now let it boil.

After boiled pour it over the fried brinjals.

1st brinjal curry is ready!

To the heated oil, add 500g of brinjal, 2 tomatoes, 1 onion and 2 green chillies. Add salt, 2tbsp of chilli powder, turmeric powder, 2tbsp of dry fish powder, curry leaves and close it with a lid. When the mixture comes to a boil, pour 2tbsp of tamarind juice and leave it to boil.

2nd brinjal curry is ready!

Heat 5 brinjals in the oven for half an hour. After half an hour take it off, peel the skin of the brinjals and mash them. In a bowl, add the mashed brinjals and pour coconut milk. Add 4 green chillies, onion, salt, lemon and mix them.

3rd brinjal curry is ready!

Season 500g of brinjals with turmeric powder and season 250g of ash plantains with turmeric powder. Fry the seasoned ash plantains and once fired, let the oil drain away. Now fry the seasoned brinjals and let the oil drain after frying.

In a separate vessel, to the heated oil add onion, pandan leaves, chilli powder and sauté. Once sautéed, take the onions off to use them later. Now in the oil in which the onions are sautéed, pour the 2nd extract of coconut milk (3 teacups) Add 1/2 onion, 3 green chillies, curry leaves and pandan leaves. Add medium sized crushed tomatoes, 2tbsp of chilli powder, 1/2tsp pepper, turmeric powder, salt, 2tbsp of dry fish powder and mix them. Now add 1tsp of Sri Lankan mixed curry powder. and mix them. The method of making the Sri Lankan curry powder is mentioned below. Add fried ash plantains, fried brinjals, 1 lemon juice. Pour 1st extract coconut milk (1/4) teacup. Finally add the sautéed onions which were kept aside.

4th brinjal curry is ready!

Sri Lankan Mixed Curry powder:

Roast 125g of coriander seeds in a pan and when roasted put into a separate vessel. Now roast 60g of cumin seeds and once roasted put it over the roasted coriander seeds. Repeat the process with 3/4 tbsp pieces of cinnamon, 1/2tbsp Fenugreek seeds,1tbsp Cardamom, 50g washed rice, 1/2tbsp mustard seeds, 1/2tsp cloves, 2inches pandan leaves, 1tbsp curry leaves and 5 curry leaf stalks. Leave them to cool off and then blend them in a blender. Sri Lankan Mixed Curry Powder is ready!!
