Sri Lankan Sweet Hoppers

Sri Lanka is very well known for its delectable foods. Especially the Hoppers in it are much admired by the tourists and the people in the country. Most of the tourists have indeed tasted the hoppers with a spicy sambol or a gravy. We are here today with a totally different Hopper recipe of Sri Lanka which will be sure to please you. Especially the ones who have a sweet tooth, as this Hopper is going to be sweet and flavoursome as well. While talking about the sweet hoppers, we could not forget to mention the special ingredients included in them. Jaggery being one of the most famous ingredient in Sr Lanka, is the center attraction of the recipe. Semolina, Raisins and Coconut milk will end up to be a great result when the Hopper is ready for you on the table. What ingredient can be used to replace jaggery?

Jaggery is the star ingredient of the recipe as it gives both the colour and the sweetness in it. If you are not much up to jaggery or you are unable to find it out on store, we have a solution for you!

You can use caramelized sugar instead of jaggery. Both white and brown sugars can be used here, but we would suggest to use brown sugar. As brown sugar would give you a strong colour after you caramelize it. Method of caramelizing sugar is given below:

To a heated pan add 2 cups of sugar and 4tbsps of water and two drops of lemon juice. Stir continuously in low heat till it comes to a caramel colour liquid. After sugar dissolves cook for 9 to 10 mins without stirring. When ready, let it cool.

Any other facts to consider?

The most important fact to consider about the sweet hopper is its batter. The right amount of consistency would give you the perfect hoppers. Though the hopper looks like a pancake, after you blend the ingredients as mentioned in the method below, be sure that the consistency of the batter is a little thicker than a pancake.

Ingredients:

Flour- 250g

Baking soda- 1/2tsp

Semolina- 75g

Coconut milk (1st extract- 300ml

Melted jaggery- 1cup

Vanilla essence- 1tsp

Raisins- 20g

Method:

Step 1

To a blender, pour milk, egg, flour, Semolina, Melted jaggery, salt, vanilla essence, baking powder and blend well. When the batter is thick and ready, add raisins to it and mix them using a spoon. (Incase of more sweetness, sugar can be used)

Step 2

Pour a spoonful of batter to a heated pan and sprinkle some raisins on top. Close the [an and let boil in low flame.

Step 3

When the Sweet Hopper is ready take it out from the pan and have with some tea.
